The Easiest Chicken Dinner You’ll Make All Week

You guys know how I love easy dinner staples, right? These Baked Chicken Drumsticks are juicy and tender with deeply browned, crisp skin, and they only take about 5 minutes to prep! Just coat the chicken with seasoning, toss it in the oven, and focus on your side dishes or whatever else you have going on while they bake. I always check the thickest drumstick with a meat thermometer and cook it to 175°F for the juiciest dark meat. They’re easy, tasty, and the perfect “emergency” meal for when you don’t want to have to think about, “what’s for dinner?”

An Easy Dinner Win for Busy Nights

Bone-in chicken is almost always one of the most affordable cuts at the store, and drumsticks are especially great for tossing in the oven while you throw together some easy sides. I season mine with a simple mix of pantry spices (smoked paprika, garlic and onion powder, a little cayenne, oregano, salt, and pepper) plus oil, to help everything brown and crisp up in the oven. But if you want to switch up the seasonings or use a marinade, I’ve got more ideas below!

Drumsticks and thighs are both flavorful cuts of dark meat, but their shape affects how they cook. Drumsticks are smaller and more compact, while thighs are thicker and usually need a little more time in the oven. Bone-in, skin-on thighs are the best substitute for this recipe (if you don’t have drumsticks), but I still rely on the internal temperature rather than the clock to know when they’re done. For a quicker option, try our air fryer chicken drumsticks, which use similar seasonings but cook in almost half the time!

  1. Use a meat thermometer. I always use a meat thermometer to double-check my chicken is cooked through. Insert the thermometer into the thickest, meatiest part of the largest drumstick without touching the bone for the most accurate reading. Chicken is safe to eat once it reaches at least 165°F, but I cook drumsticks to about 175°F so the dark meat has time to become more tender.
  2. Start checking before the full cooking time is up. I usually begin checking the drumsticks at around 35 minutes, especially when they’re on the smaller side. Drumstick size, dark baking sheets, oven hot spots, and convection or countertop ovens can all affect how quickly the chicken cooks and browns.
  3. Flip them halfway through. To ensure even cooking and crispy skin, I always flip my drumsticks halfway through baking. It helps all sides to get golden brown and delicious!
  4. Don’t overcrowd the baking sheet. There should be enough space between each drumstick so hot air can circulate, and the skin can crisp up. I find the skin is more likely to stay soft when the pieces are packed too closely together. Use two baking sheets for a larger batch rather than squeezing everything onto one.
  5. Double the seasoning mix. If you use the spices in the recipe card, consider mixing a double batch before handling the raw chicken. Some of our readers have shared that this blend tastes amazing on roasted potatoes! I think it would be delicious on other roasted veggies, too. Keep the portion for your sides separate so it never comes into contact with raw chicken.
  6. Want to use chicken breasts? Dark meat chicken, like drumsticks and thighs, is extremely forgiving due to their higher fat content and the skin-on, bone-in combination that locks in moisture. Chicken breast needs a slightly different technique because it’s a leaner cut of meat. I only recommend swapping the drumsticks for bone-in, skin-on thighs when using the method in this recipe. This oven-baked chicken drumstick recipe is the perfect dinner idea that can be flavored with any of your favorite seasonings.

*Use bone-in, skin-on chicken drumsticks for maximum flavor and juiciness. I used 6 drumsticks (about 1.75 lbs total). If you’re using more or less drumsticks, be sure to adjust the seasoning amounts accordingly. Smaller drumsticks may be ready before 40 minutes, so start checking them around 35 minutes. Extra-large pieces may need a few additional minutes. Use the internal temperature as your final guide. You can also swap in bone-in, skin-on chicken thighs using the same method as in this recipe.

**You can use any high-heat cooking oil, such as canola, vegetable, or avocado oil.

***Insert an instant-read thermometer into the thickest part of the drumstick, making sure it doesn’t touch the bone. Chicken is safe to eat at 165°F, but I prefer cooking dark meat to about 175°F for a more tender result. If the drumsticks vary in size, check the temperature of more than one piece.

Air fryer method: To cook the drumsticks in an air fryer, preheat it to 400°F and arrange the chicken in a single layer without overlapping. Air fry for 12 minutes, flip, then cook for about 10 minutes more, or until the thickest piece reaches 175°F. Smaller drumsticks may cook faster, so begin checking them at around 18 minutes. Seasoning notes: When substituting another seasoning blend, check whether it already contains salt and reduce or omit the added ½ teaspoon of salt as needed. Sugary sauces like barbecue or teriyaki can burn at high temperatures, so brush them over the drumsticks during the final 10-15 minutes of baking, if desired!

How to Make Chicken Drumsticks Step-by-Step Videos

Gather all of your ingredients and preheat the oven to 425ºF

Make the spice mix: Decide which herbs and spices you want to use to season the drumsticks. I used 1 tsp smoked paprika, ½ tsp garlic powder, ¼ tsp onion powder, ⅛ tsp cayenne pepper, ¼ tsp oregano, ¼ tsp freshly cracked black pepper, and ½ tsp salt.

Place about 1.75 lbs. chicken drumsticks in a large bowl and drizzle 2 Tbsp cooking oil over the top. Add the spice mixture, then toss until every drumstick has a thin, glossy coating and the spices are evenly distributed over the skin.

Bake the chicken: Arrange the drumsticks in a single layer on a baking sheet, leaving space between each piece so the hot air can circulate and the skin can crisp up and brown. Line the baking sheet with parchment paper for easier cleanup, if desired.

Bake for about 40 minutes. After about 20 minutes, the skin should be tightening and starting to brown. Flip each drumstick, then return the pan to the oven to finish cooking. The skin should look deeply browned and crisp around the edges once done. Insert an instant-read thermometer into the thickest, meatiest part of the largest drumstick without touching the bone. Chicken is safe at 165°F, but I continue cooking drumsticks to about 175°F for more tender dark meat.

I use a very classic mix of smoked paprika, garlic, onion, and oregano for this chicken drumsticks recipe, but you can literally use any seasoning blend you like for this. There’s so much flexibility! A dry seasoning blend is the quickest option because the chicken can go straight into the oven, but you can definitely marinate the chicken when there’s time to plan ahead. However, I promise a marinade isn’t required for juicy baked drumsticks! I always stick with the dry seasoning blend in this recipe when dinner needs to get into the oven quickly!

Serving Suggestions

This recipe makes about 6 oven roasted drumsticks, but you can easily scale that up depending on appetites! To keep dinner simple, I always serve them with budget-friendly favorites like creamy mashed potatoes, rice, or a side salad. I love our Instant Pot mashed potatoes because they take about the same amount of time as the chicken, but free up the stovetop so I can also make these quick lemon butter green beans. Both are pictured below with the plated chicken.

You can also add some oven roasted frozen broccoli to the baking sheet for the final 25-30 minutes, as long as there’s enough space around the chicken and broccoli for everything to roast. Stir the broccoli after about 20 minutes and check it a little early since the oven is set to 425°F. I think a dipping sauce would also be delicious! Some of my favorites are honey mustard, ranch dressing, or BBQ sauce (you can also brush the BBQ sauce over the chicken in the last 10-15 mins of baking!).

Storing and Reheating

Once cooled, store leftover cooked chicken drumsticks in an airtight container in the refrigerator for up to 3-4 days.

Reheating

I get the best results reheating these drumsticks in the oven or air fryer at 375°F until they’re heated through and the skin is crisp again. Check the thickest piece with a thermometer and make sure it reaches 165°F before serving. The microwave works in a pinch, but the skin will stay softer.

Freezing

Freeze the cooled drumsticks in a freezer-safe bag or container for up to 2-3 months. Thaw them overnight in the refrigerator, then reheat them in the oven or air fryer as above.
